Happy Easter! We’re not up to anything special this weekend, merely catching up on to-dos. I’ve been hankering for some breakfast food lately, so I’ve picked a couple recipes to sooth my craving.

Oat Waffles

I’m likely to transform these into multigrain nut waffles with the addition of some buckwheat flour, almond flour, pecans, and sunflower seeds. I like a really nutty flavor.

Breakfast Quesadillas

You hardly need a recipe for quesadillas or burritos, but here is one anyway. I use cassava and almond flour tortillas which don’t hold together particularly well. Quesadillas make life easier in that way. I’m going to try making home-made tortillas at some point.

Moroccan Meatballs (a tried and true favorite)

Simple Miso Ramen (we’re using a vegan recipe from Bowl)
